This recipe comes together QUICK! Just chop some veggies, stir up the sauce, mix everything together, and you’ll have a delicious healthy meal. It’s perfectly packable for lunches at the office or school. The edamame provides you with lots of protein to keep you full throughout the afternoon. I find that the longer you let it sit, the more flavorful it becomes. The sauce will turn purple from the cabbage but there’s nothing wrong with a little extra color!

This healthy vegan slaw is made with fresh antioxidant rich ingredients that will give you lots of energy and protein!
- 2 cup shredded red cabbage
- 1 cup carrots, julienned
- 3 green onions, chopped
- 1 cup edamame
- 1/4 cup cilantro, chopped
- sesame seeds
- 2 tbsp lime juice
- 2 tbsp agave nectar
- 1 tbsp soy sauce
- 1 tbsp rice vinegar (or sub ACV)
- 1 tsp ginger, grated
In a large bowl stir together cabbage, carrot, green onion, edamame, and cilantro.
In a small bowl whisk together all sauce ingredients. Pour sauce over the slaw and mix to coat.
Garnish with sesame seeds. Enjoy right away or store in the refrigerator for up to 3 days.
