Sometimes you just need a huge bowl of bright colored veggies that will make you feel great. That is exactly what this recipe is for. Whether you have the winter blues or summer fever, close your eyes and munch on this fresh and flavorful slaw and you will be feeling happy in no time! The ingredients are packed full of antioxidants that will make you feel invincible. This slaw is also a great boost to your immune system if you have a stubborn cough that just won’t go away.
This recipe comes together QUICK! Just chop some veggies, stir up the sauce, mix everything together, and you’ll have a delicious healthy meal. It’s perfectly packable for lunches at the office or school. The edamame provides you with lots of protein to keep you full throughout the afternoon. I find that the longer you let it sit, the more flavorful it becomes. The sauce will turn purple from the cabbage but there’s nothing wrong with a little extra color!

Whenever you eat a meal bright in color you know that you are getting a lot of antioxidants. Ginger is also one of my all time favorite ingredients. It is a true healer helping with anything from to migraines to sea sickness to colds. Edamame is also a wonderful plant food to use often because it is a complete protein, it’s heart healthy and it can help protect you from various cancers. This meal will fuel your body and make you feel amazing.

Antioxidant Asian Slaw
- 2 cup shredded red cabbage
- 1 cup carrots, julienned
- 3 green onions, chopped
- 1 cup edamame
- 1/4 cup cilantro, chopped
- sesame seeds
Lime Ginger Sauce
- 2 tbsp lime juice
- 2 tbsp agave nectar
- 1 tbsp soy sauce
- 1 tbsp rice vinegar (or sub ACV)
- 1 tsp ginger, grated
- In a large bowl stir together cabbage, carrot, green onion, edamame, and cilantro.
- In a small bowl whisk together all sauce ingredients. Pour sauce over the slaw and mix to coat.
- Garnish with sesame seeds. Enjoy right away or store in the refrigerator for up to 3 days.
