Ok, I’ll be honest, I don’t like to wake up early on weekdays to cook a big breakfast. I’m always looking for nutritious vegan breakfasts that don’t require much time to make. Cereal and smoothies happen far too often. This Banana Breakfast Bowl is just what I need to quickly put together a delicious and nutritious breakfast.
I love to have peanut butter as a part of my breakfast. It’s delicious and the protein keeps you satisfied until lunch. This breakfast is made with layers of banana, peanut butter, a variety of seeds, and your favorite natural cereal. I used puffed Kamut. Puffed grains are available in the cereal section of health food stores. I love them because they don’t have any added ingredients. The bananas provide a natural sweetness that makes this bowl irresistible.
This breakfast is a great way to start off your day because it is made from whole food, plant-based ingredients. Peanut butter is an excellent source of manganese and niacin. Bananas are packed with fiber, vitamin C, potassium, manganese, and vitamin B6. The puffed Kamut I used is high in fiber, iron, thiamin, and niacin. Plus the seeds add even more nutrients. Put these all together and you are fueling your body with vitamins and minerals early in the day. If you’re an overachiever, you can drink a green smoothie with this too!
This is a quick and nutritious breakfast.
- 2 bananas sliced
- 1/4 cup natural peanut butter
- 1/4 cup natural cereal I used puffed kamut
- 1 tsp chia, hemp, and sunflower seeds
In a bowl, layer sliced bananas, peanut butter, and cereal. Then add another layer of bananas and sprinkle with seeds. Enjoy.
