Merry Christmas! It’s the season to indulge. These bites of chocolate fruity goodness are perfect to treat yourself or to share with friends. The flavor of the dark chocolate and the bursts of fruity pomegranate juice perfectly balance one another.
I am huge fan of pomegranate so whenever they are in season I always have them around. I put them in everything! They are great on salads, squashes, and of coarse desserts. These dark chocolate covered pom arils are like a winter edition of chocolate covered strawberries.
I love how easy and fuss free this recipe is. Around the holidays we are all strapped for times so you can make these in advance for parties and get togethers. That is IF any make it out of your house. Whenever I make them they disappear really fast! These delicious bites are fruity, sweet, and they have a crunchy texture from the pomegranate arils. You are going to love them. Now lets get to it!
Pomegranate arils covered in rich dark chocolate with a hint of creamy coconut.
- 1 1/2 cups pomegranate arils (about 1 medium pomegranate)
- 4 oz dark bittersweet baking chocolate
- 1/3 cup full fat coconut milk (the kind that comes in a can)
In a double boiler over low-medium heat, add the coconut milk, and chocolate. Cook, stirring frequently until all chocolate has completely melted. Remove from heat.
Stir the pomegranate arils into the chocolate mixture. Place 1 tbsp sized scoops of mixture on a parchment paper line baking sheet. Refrigerate for 1-2 hours until stiff. Serve chilled, enjoy.
