Dill Carrots and New PotatoesYou are going to love how simple and quick this veggie side dish is. You only need one pan, 4 ingredients, and 15 minutes. It works perfectly with a hearty main dish. Dill, carrots, and potatoes are a match made in heaven. The flavors work so well together.

Dill Carrots and New PotatoesThis recipe is great for a beginner cook. The ingredients are easy to find, and the method is simple. I also like this because you can serve it warm or cool. I often make a big batch to use in buddha bowls and lunches later in the week.

Dill Carrots and New PotatoesThis dish is oil-free so you can eat as much as you want without worrying about fat or calories. The carbs from the potatoes will give you energy throughout the day. Carrots are also a great source of beta-carotene, a powerful nutrient that is extremely healthy. It is beneficial for your skin, immune system, vision, and more. You can actually make a noticeable difference in your vision by eating plenty of beta-carotene.
