French toast is delicious! My favorite things about it are the warm and toasty outside, soft and moist inside, and of course the maple syrup drizzled on top. This recipe has all the goodness of classic french toast but it is made without animal products.
When making this recipe, be sure that you soak your bread for a full 5 minutes. You want to make sure the bread has been soaked through so that you achieve a soft and moist inside. Use bread that is sturdy enough to stay together when soaked. Most whole wheat bread will work well.
French toast will always have a special place in my heart. It is one of a select few meals that my boyfriend, Bryce, makes his specialty. When I told him I was going to try to make it vegan, he thought it couldn’t be done. After a couple trials of side by side taste tests, this is the recipe that finally won his heart. I hope you all enjoy it as much as we did.
This easy french toast recipe has all the flavor and texture of the classic version without any of the animal products.
- 1 cup almond milk
- 1 1/2 tbsp ground flax seed
- 2 tsp agave nectar
- 1/2 tsp vanilla
- 1/8 tsp cinnamon
- pinch of salt
- 5-6 slices favorite bread (sturdy variety recommended)
- 2 tsp vegan margarine*
In a wide shallow bowl mix together all ingredients from almond milk to salt. Allow mixture to sit for 5 minutes to thicken slightly.
Once mixture has thickened, stir again and add your first slice of bread. Soak for about 5 minutes, flipping halfway through. Stir the soaking mixture between each slice of bread. Use a wide shallow pan to soak several pieces at once.
Heat a large skillet over medium heat. Add 1 tsp vegan margarine, move it around the pan as it melts until the whole surface is covered. Add your soaked slices and cook 4-6 minutes on each side, until golden brown.
* My favorite vegan butter replacement is Earth Balance. Seriously, try it out some time.
