You can make this meal using just one dish by cooking the chickpeas first and then cooking the couscous in the same pot after. This is also beneficial because the spices left in the pot from the chickpeas will be infused into the couscous. The tahini dressing is made from only 4 simple ingredients and leftovers can be used on salad or to dip vegetables in.

Chickpeas are a great source of plant protein and improve digestion because of their high fiber content. Tomatoes are filled with antioxidants. Tomatoes are also a great source of vitamin A, vitamin C, and potassium. Drizzle with tahini dressing which is a great source of calcium, E and B vitamins.
This Buddha bowl is made with spiced chickpeas, couscous, cucumber, tomato, and a lemon tahini dressing.
- 1/2 cup couscous
- 1/2 cup water
- 1 14 oz can chickpeas
- 1 tsp coriander
- 1 tsp cumin
- 1 vine ripened tomato diced
- 1 small cucumber sliced
- 1/4 cup tahini
- 1 tbsp lemon juice
- 1 tbsp water
- 1/2 tsp dill
- 1/2 tsp salt
In a medium size pot bring 1/2 cup water to a boil. Once boiling, remove from heat, add the couscous, and cover. Keep covered for 5 minutes to allow couscous to fully cook.
Drain the chickpeas and add them to a skillet over medium heat along with the coriander and cumin. Saute for 3-5 minutes until lightly browned.
Mix all ingredients for tahini dressing together is a small bowl. Add more water to thin if necessary.
To assemble bowls layer couscous, chickpeas, tomatoes, and cucumber. Drizzle with tahini dressing and enjoy.
