Energy Bites are the perfect healthy snack when you are on the go. They don’t require any baking so they are super quick and easy to put together. You can take them wherever you go so you are always ready for a snack-mergency. These mocha energy bites also give you a little extra kick because they are made with coffee. Perfect for mornings, or use decaf and snack all day and night.
This recipe is so simple. It can be made in just one bowl and only takes 5 minutes of hands on time. If you can measure ingredients and stir you can make this recipe. It can be fun to get the kids involved when making energy bites too.
Most of the sweetness in these energy bites comes from medjool dates. I love using dates as a sweetener because they are a fruit, straight from the earth so you know exactly what you are eating. The coffee isn’t the ingredient that will be giving you energy in this recipe. Flax meal and old fashion oats will be supplying you with plenty of nutrients to keep you feeling energized. Cocoa is also a superfood packed with antioxidants.
Easy to make energy bites with a hint of coffee and cocoa.
- 8 medjool dates
- 1/2 cup hot water
- 1 tbsp instant coffee granules
- 1 tbsp cocoa powder
- 2 tbsp liquid sweetener (agave, maple syrup, ect)
- 1 1/2 cups old fashion oats
- 1/2 cup flax meal
- 1/2 cup chopped almonds
In the bowl of a food processor (or blender) add dates and pour hot water over them. Let stand 15 minutes, until dates have softened.
Next add coffee granules, cocoa, and liquid sweetener. Blend on high until everything is completely smooth. Pour into a medium mixing bowl (or remove the blade from the food processor bowl) and hand mix in all remaining ingredients.
Place mixture in the fridge fro 30 minutes to harden or if you are in a hurry add flax meal 1 tbsp at a time until mixture is thick enough to roll into balls.
Take spoonfuls approx 2 tbsp in size and roll into balls. Store energy bites in the fridge fro up to a week. Enjoy.
