A healthy sundae? Yes! This nice cream sundae is made from just fruit and nuts. It doesn’t have any artificial sweeteners. All the sweetness comes directly from fruit. This sundae features vanilla banana nice cream, date caramel, and toasted pecans. Who would’ve known that you could make a dessert this tasty out of a few natural ingredients?
I grew up eating a lot of ice cream. So naturally, when I became plant-based, I was thrilled to find out about nice cream. It seems too good to be true! Frozen bananas blended until smooth turn out just like soft serve ice cream or scoop-able ice cream if you freeze for a few more hours. This is what the vegan community refers to as “nice cream”. It is so smooth and sweet that you won’t believe it’s just bananas. You can add anything you want to flavor it. One of my favorites is to add a little cocoa powder to make chocolate nice cream.
Nice cream is great on its own, but we need something like caramel to make an even more delicious nice cream sundae. You can make a caramel sauce from just dates alone. Dates have a wonderful natural sweetness and dark color that makes them perfect for mimicking caramel. The deep sweet flavor is brought out even more when you add a pinch of salt.
Finally we need some crunch on this sundae. Toasted pecans are perfect. They have a delicious nutty flavor, especially when they are toasted.
This recipe is made with whole plants foods. It is high in vital nutrients, especially considering that it is a dessert. Bananas have lots of fiber, Vitamin C, vitamin B6, manganese, and of course, potassium. Pecans contain Vitamin E, thiamin, manganese and 16 other vital nutrients. Dates aren’t as high in nutrients but they are an outstanding natural sweetener.

This healthy dessert is naturally made from only fruit and nuts.
- 4 cups banana slices, frozen
- 1/8 tsp cinnamon
- 1/2 tsp vanilla
- 8-10 medjool dates
- 1/2 cup hot water
- 1/8 tsp sea salt
- 1/4 cup raw pecans
Preheat oven to 250°. Roughly chop pecans and place on a tray in the oven for 15 minutes.
Add dates to a bowl of hot water and soak for 10 minutes. Drain, and add to the blender with 1/2 cup hot water and the sea salt. Blend until smooth. If the texture is more like a paste than a sauce, keep adding water 1 tbsp at a time until it is pourable. Remove from blender and set aside.
Add the banana slices, cinnamon, and vanilla to the blender and blend until the texture is smooth. The texture will be thick and creamy like soft serve ice cream. If you wish to have scoopable ice cream freeze for an additional 3-5 hours. Freezing overnight is not recommended.
To assemble your sundae, place nice cream in a bowl, drizzle date caramel over it, generously top with pecans and a sprinkle of cinnamon if desired.
