Creamy spinach and artichoke sauce served over whole wheat pasta.
- 8 oz whole wheat pasta
- 3 cloves garlic
- 2 cups spinach packed
- 1 tbsp water
- 1 15 oz can artichokes
- 1 cup raw cashews soaked overnight
- 1 cup water or almond milk
- 1/4 cup nutritional yeast flakes
- 1 tsp dijon mustard
- 2 tbsp lemon juice
- 1/2 tsp salt
Cook pasta according to package directions, drain.
Add garlic to a skillet over over medium heat. Saute for 2 minutes. Add spinach and 1 tbsp water and cook until spinach is wilted, 3-5 min.
While spinach cooks, add all sauce ingredients to a blender and blend until smooth. When spinach is wilted, add sauce and artichokes. Cook for 5 minutes until sauce is fully heated and thickened slightly.
Serve by placing cooked pasta on plate and topping with a generous helping of sauce. Enjoy.
