Summer Salad with Avocado Ranch
- 4 cups lettuce, washed
- 1/2 cup strawberries, roughly chopped
- 1/3 cup pistachios, shelled
- 3/4 cup edamame
- 3 tbsp hemps seeds
- 1 avocado
- 2 tbsp lemon juice
- 1/2 cup almond milk
- 1/2 tsp garlic powder
- 1/2 tsp parsley
- 1/2 tsp dill
- 1/4 tsp pepper
- In a blender add all ingredients for the avocado ranch dressing and blend until smooth.
- In a large bowl mix lettuce, strawberries, pistachios, edamame, and hemp seeds. Top with dressing and serve.
