When the cool weather comes, it’s time to make a warm hearty meal. You will love this sweet potato barley soup. A cold front rolled through yesterday, so I went outside and harvested the rest of the sweet potatoes in the garden just before the flurries started. Flurries, in October in North Carolina! When we came inside, I put this recipe to use and it warmed us right up.
This soup is made with lots of winter vegetables so it is great to make all winter long. It also comes together fairly quickly without much fuss. Simply cut your veggies and let it simmer away on the stovetop. You will love all the sweet potato flavor. The broth is a perfect combo of salty, smokey, and sweet. The sweetness added to the broth is what really lets the sweet potato shine.
Another thing I love about this soup is that it is packed with healthy ingredients. Sweet potatoes are an excellent source of many vitamins, including vitamins A, B1, B2, B6, and C. Kale is known for its high vitamin and mineral content, which includes a high level of calcium. Barley is a great source of fiber. This soup is also made without oil. It uses all healthy vegan-friendly ingredients. You will feel recharged and warmed after eating it.
This warm and hearty soup is perfect for fall through winter. It comes together easily and uses healthy winter vegetables. It is sure to warm you up on a cold day.
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 5-6 cups vegetable broth
- 2 tbsp fresh thyme
- 1 tsp salt
- 1 tsp liquid smoke
- 3/4 cup pearl barley
- 1 medium sweet potato cubed
- 2 cups kale, roughly chopped
- 2 tsp maple syrup
Heat a large pan over medium heat. Once it is hot add onions and celery and cook for 3-5 minutes, add garlic and cook for 1 minute, or until onions are translucent and garlic is lightly browned.
Add the vegetable broth, thyme, salt, liquid smoke, pearl barley, and sweet potato. Bring to a boil, then reduce the heat and simmer for 25 minutes. After soup has simmered for 15 minutes add the kale and cook for 10 more minutes. Add the maple syrup and then taste the soup. Adjust flavor to your liking. Serve immediately and enjoy.
