Mocha Energy Bites

Easy to make energy bites with a hint of coffee and cocoa.

  • 8 medjool dates
  • 1/2 cup hot water
  • 1 tbsp instant coffee granules
  • 1 tbsp cocoa powder
  • 2 tbsp liquid sweetener (agave, maple syrup, ect)
  • 1 1/2 cups old fashion oats
  • 1/2 cup flax meal
  • 1/2 cup chopped almonds
  1. In the bowl of a food processor (or blender) add dates and pour hot water over them. Let stand 15 minutes, until dates have softened. 

  2. Next add coffee granules, cocoa, and liquid sweetener. Blend on high until everything is completely smooth. Pour into a medium mixing bowl (or remove the blade from the food processor bowl) and hand mix in all remaining ingredients.

  3. Place mixture in the fridge fro 30 minutes to harden or if you are in a hurry add flax meal 1 tbsp at a time until mixture is thick enough to roll into balls. 

  4. Take spoonfuls approx 2 tbsp in size and roll into balls. Store energy bites in the fridge fro up to a week. Enjoy.
