This 4 ingredient, quick and easy vegan side dish uses fresh dill to compliment lightly steamed carrots and new potatoes.
In a saucepan over medium heat, add carrots, new potatoes, and 1/4 cup water. Once water begins to steam, cover, turn the heat to low and allow to steam for 10-12 minutes,
Check the vegetables to ensure they are fully cooked. If not, steam for a few more minutes, adding more water if necessary.
Once vegetables are cooked but still firm pour off the excess water and stir in remaining ingredients. Eat warm or refrigerate for later. Enjoy!
