This warm and hearty soup is perfect for fall through winter. It comes together easily and uses healthy winter vegetables. It is sure to warm you up on a cold day.

  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 5-6 cups vegetable broth
  • 2 tbsp fresh thyme
  • 1 tsp salt
  • 1 tsp liquid smoke
  • 3/4 cup pearl barley
  • 1 medium sweet potato cubed
  • 2 cups kale, roughly chopped
  • 2 tsp maple syrup
  1. Heat a large pan over medium heat. Once it is hot add onions and celery and cook for 3-5 minutes, add garlic and cook for 1 minute, or until onions are translucent and garlic is lightly browned.

  2. Add the vegetable broth, thyme, salt, liquid smoke, pearl barley, and sweet potato. Bring to a boil, then reduce the heat and simmer for 25 minutes. After soup has simmered for 15 minutes add the kale and cook for 10 more minutes. Add the maple syrup and then taste the soup. Adjust flavor to your liking. Serve immediately and enjoy.
