Pomegranate arils covered in rich dark chocolate with a hint of creamy coconut.

  • 1 1/2 cups pomegranate arils (about 1 medium pomegranate)
  • 4 oz dark bittersweet baking chocolate
  • 1/3 cup full fat coconut milk (the kind that comes in a can)
  1. In a double boiler over low-medium heat, add the coconut milk, and chocolate. Cook, stirring frequently until all chocolate has completely melted. Remove from heat.

  2. Stir the pomegranate arils into the chocolate mixture. Place 1 tbsp sized scoops of mixture on a parchment paper line baking sheet. Refrigerate for 1-2 hours until stiff. Serve chilled, enjoy.
