Antioxidant Asian Slaw

This healthy vegan slaw is made with fresh antioxidant rich ingredients that will give you lots of energy and protein!

  • 2 cup shredded red cabbage
  • 1 cup carrots, julienned
  • 3 green onions, chopped
  • 1 cup edamame
  • 1/4 cup cilantro, chopped
  • sesame seeds
Lime Ginger Sauce
  • 2 tbsp lime juice
  • 2 tbsp agave nectar
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar (or sub ACV)
  • 1 tsp ginger, grated
  1. In a large bowl stir together cabbage, carrot, green onion, edamame, and cilantro.

  2. In a small bowl whisk together all sauce ingredients. Pour sauce over the slaw and mix to coat.

  3. Garnish with sesame seeds. Enjoy right away or store in the refrigerator for up to 3 days.
