This fresh and healthy cucumber soup is perfect to cool you down and energize you on a hot summer day.

Ingredients
  • 2 large cucumbers peeled
  • 1 medium avocado
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/3 cup fresh cilantro
  • 1/2 tsp apple cider vinegar
  • 1 tbsp lemon juice (1/2 lemon juiced)
Instructions
  1. In a large blender, add all ingredients and blend on high for 1-2 minutes, until thoroughly combined and silky smooth.  Cool in refrigerator for 20-30 minutes before eating.

Recipe Notes

If you keep your cucumbers and avocado in the fridge before making using them you won't need to cool it as long!
