Who can resist crispy, crunchy, delicious taquitos? Not me! That’s why I created this fat free vegan recipe for healthier baked taquitos. They have all the delicious flavor and same crunchy texture as the original while being oil free and vegan! A super creamy avocado sauce perfectly compliments them!
So what’s a taquito? Also know as a rolled taco or a flauta they are a rolled tortilla stuffed with a filling inside. Usually they are fried to achieve a crispy outer texture. I was delighted to discover that they get just as crispy in the oven without all that grease.
I tested this recipe with both corn and flour tortillas. If you plan on using corn you will need to heat them first (in a microwave or in your oven as it heats, wrapped in foil). Even after heating the corn tortillas have a mind of their own and when wrapped so tightly they tend to crack and rip. Flour tortillas are much more flexible and easier to work with. They won’t get as crispy as the corn but definitely crispy enough to give you a good crunchy texture. My first choice would be flour but either will work.
Oil-free healthier taquitos stuffed with refried beans and topped with a creamy avocado sauce.
- 10 small tortillas (flour or corn)
- 3 cups refried beans*
- 1 medium avocado
- 1/4 cup almond milk
- 1/2 tsp sea salt
- squeeze of lime
- chopped cilantro for serving (optional)
Preheat oven to 350° . If you are using corn tortillas place them in oven, wrapped in foil, as it warms. Remove once they are heated enough to be flexible.
Place 1/4 C refried bean in a long thin line in the center of each tortilla. Roll each tortilla around the filling as tightly as possible. Place seam side down on a parchment lined baking sheet.
Once all the taquitos are rolled cook in the heated oven for 15 minutes. Take them out and flip, then cook for another 5-10 minutes.
While the taquitos cook make the avocado cream by adding the avocado, almond milk, sea salt, and squeeze of lime juice to a blender and blend until smooth and creamy.
Serve taquitos immediately with chopped cilantro and avocado cream either drizzled over them or on the side to be used for dipping. Enjoy!
