Vegan Pumpkin Spice Latte

Vegan Pumpkin Spice LatteIt’s that time of year again. The leaves are changing, the cool crisp air surrounds us, and everyone is sipping their favorite pumpkin spice drinks. I am a sucker for these tasty specialty beverages. Going to the coffee shop can really add up, so I wanted to try making my own at home.

Vegan Pumpkin Spice LatteThis recipe is so much healthier than what you buy at the café. Those drinks are overly sweetened and usually made with dairy. This recipe is not very sweet to begin with so you can just add a bit more agave nectar to make it exactly how you desire. Instead of dairy, I used coconut milk which compliments the flavor of the pumpkin. Coconut milk is also extremely rich and creamy, making it perfect for a latte.

Vegan Pumpkin Spice LatteYou can use any coffee you like to make your latte. Another option is to make the coconut milk and pumpkin spice portion of the drink and save it in the refrigerator for the following couple of days. Then, whenever you are craving that pumpkin spice, simply mix it in with your coffee.

Enjoy the flavor of fall with this super creamy pumpkin spice latte. Coconut milk makes it very creamy and it is lightly sweetened with agave nectar.

Ingredients
  • 1 12 oz can coconut milk
  • 3/4 cup puréed pumpkin
  • 1 tbsp agave nectar
  • 1 tsp pumpkin pie spice
  • 24 oz favorite coffee, brewed
Instructions
  1. In a large saucepan over medium heat, add coconut milk, pumpkin, agave nectar, and pumpkin pie spice. Whisk together until thoroughly mixed.  Cook for 3-5 minutes.

  2. Stir in all 24 oz of coffee, or for single serving mix with equal parts coffee in a small mug. Add more sweetener if desired. Extra pumpkin spice mixture can be stored in the fridge for up to 3 days. Always use with equal parts of coffee.
