When making this recipe, you can save time by cooking your lentils and brown rice in advance. I often batch cook lentils and rice at the beginning of the week so weeknight meals take less time. Using parboiled brown rice also helps reduce the cooking time. Be careful when you add the rice and lentils to the food processor. You don’t want to process them too much or they will become a paste. You want to leave them less processed so the texture is similar to that of a meatball.

This heart warming meal is easily made vegan. These delicious Swedish meatballs are made with lentils, brown rice, and a rich gravy.
- 1/2 cup lentils rinsed
- 1/2 cup parboiled brown rice
- 1/2 cup breadcrumbs
- 1/8 tsp nutmeg
- 1/2 tsp garlic powder
- 1/8 tsp allspice
- 1/2 tsp dried sage
- 1/2 tsp salt
- 2 cups vegetable broth
- 1/3 cup flour
- 1 tsp soy sauce
- 1/2 tsp dried thyme
Preheat oven to 350°. Bring a large pot of water to a boil. Add lentils and simmer 5 minutes. Add brown rice and simmer 15-20 more minutes until everything is tender. Drain lentils and rice.
Transfer to a food processor and pulse a few times. Stir in breadcrumbs, nutmeg, garlic powder, allspice, dried sage, and salt. If mixture seems too moist, add more breadcrumbs. Form tablespoon sized balls and place on parchment lined baking sheet. Bake in oven for 20 minutes.
While meatballs bake, make the gravy. Whisk together all remaining ingredients in a medium sized sauce pan. Bring to a gentle boil and simmer for 5 minutes until thickened.
Remove meatballs from the oven. Pour gravy over meatballs on the plate right before serving. Enjoy!
